一般来说白色脂肪细胞的直径大约在70μm（=0.07mm）左右。它是将肝脏中产生的中性脂肪作为油滴储存起来形成的，最大膨胀直径可达120～130μm。
当肝脏产生的脂肪量过大，无法被现有脂肪细胞储存下的时候，白色脂肪细胞的数量就会增多。白色脂肪细胞还有调控食欲和代谢荷尔蒙分泌的功能。
